Ingredients: (for 3 servings)
6 pieces of chicken (I used legs)
1 tbsp. crushed garlic
1 tbsp. Aji Panca (You can use Paprika)
1 and 1/2 onion cut into thick slices
1 Aji Amarillo cut into thin slices
1/4 tz Vinegar
1 to 1 1/2 cup of chicken broth
Salt, pepper and Cumin to taste
Garnish:
1-2 boiled Sweet potatoes
1-2 boiled eggs
black olives (opt.)
Lettuce leaves for garnish (opt.)
Preparation Steps:
1. Cook the chicken on 5 cups of water for 25-30 min. Reserve the chicken and broth aside.
2. Brown the chicken in a little oil.
3. In the same oil, fry the garlic and aji panca or paprika, let it fry for a few minutes over medium heat. Add onion, aji amarillo (yellow pepper), salt, pepper and cumin to taste and mix well. Place the chicken and vinegar. Reduce heat to minimum and cover the pan for 5 minutes and serve!
