Peruvian Chicken with Rice or Arroz con Pollo Peruano |

Ingredients: (about 5-6 servings)
6 pieces of Chicken
1 medium chopped Onion
1 tsp of Aji Amarillo paste (Peruvian yellow chili)
1 tb of ground Garlic
1 cup of grind cilantro
1 Bell Pepper (chopped into small cubes or slices)
3/4 cup of Peas
3/4 cup of Corn or Peruvian Corn
2 cups of White Rice
2 cups of Chicken or Beef Broth
1 cup Beer
Salt and Pepper to taste
1 pinch of Turmeric (optional)
Preparation:
Over a medium temperature stove- Brown the chicken with salt and pepper and set aside. Using the same pot fry the Onion, Aji Amarillo paste, Garlic, and Grind Cilantro, season with Salt, Pepper and Turmeric (optional). Then add the Bell Pepper, Peas, Corn, White Rice,Broth, cup of Beer and the Chicken pieces already brown. Cook uncovered until you are able to see the rice on the surface. Then lower the temperature to medium-low and cover the pot for 20-25 min and READY!
Served optional with Creole Salsa to give to your dish a Peruvian touch! ;)
