PISCO SOUR - VIDEO

Welcome back to my kitchen :) Today I bring you a classic Peruvian drink and super popular and delicious Pisco Sour.




Ingredients for 4 Servings:
3 (I'm using a 1/2 cup measurement) of Pisco 
2 (1/2 cup) of Jarabe de Goma or our Mix of 1/2 cup sugar and 1/2 cup water
1 (1/2 cup) of  Fresh Lemon 
1 Egg White 
1 cup of Cubed Ice 
few drops of Angostura Bitter for garnish. In my case I use Cinnamon. 

This recipe can be used with any kind of measurement instrument like a cup, a glass or any other container,  just have to respect the 3-2-1 principles and then you have an awesome Pisco Sour. 

Preparation steps:
Blend all ingredients, placing them one by one in a blender or cocktail glass. Blend about 15 seconds and voila! SERVE and decorate it with a few drops of Angostura bitters or a little bit of cinnamon.

PASTA WITH BECHAMEL OF MUSHROOMS - VIDEO

Welcome to my blog, today I made Pasta with Bechamel of Mushrooms, super delicious!!



Ingredients: (3-4 servings)
1 1/2 or 2 cups of Mushrooms (slice)
1 Tbsp of minced Garlic
4 Tbsp of Butter
3 Tbsp of Flour
2 cups of Milk (I used soy milk)
1 package of chicken broth powder (opc)

Preparation:
1. Put a pan in a medium heat stove with some oil and sauté mushrooms until looks golden brown. Once done, sprinkle with some fresh parsley and reserve.
2. In the same pan melt the butter, then add flour, mix well.Then add milk. Seasoning with salt, pepper, nutmeg and chicken broth.Continue stirring, until your mix turn to a bechamel sauce and add the mushrooms. Let it simmer for 5 min.
3. Mix with your favorite *pasta!
*Up to 1 lb of pasta

BROWNIES (EGG-FREE) - VIDEO

Hi everyone, here again bringing you the best of my kitchen!!. Today I did some Brownies (Egg-Free)  delicious! You have to try this easy recipe :)




Oven: 175 * C to 350 * C for 25-30 min

Dry Ingredients:
1/2 Cup of Flour 
1/2 cup of Unsweetened Cocoa
1/2 tsp Baking Powder
1/4 tsp Baking Soda
Pinch of Salt
Wet ingredients:
1/2 cup or 1 stick of  Unsalted Butter
1 can of 396 grm of  Condensed Milk 
2 tbsp of Sour Cream or thick Yogurt- natural flavor
2 tbsp  of Sugar
1/2 tsp Vanilla Extract
Reserve:
1/2 cup of Hot Water
1 tbsp of Instant Coffee  (optional)

Preparation Steps:
Sift in a bowl all dry ingredients and set aside. In another bowl add all the wet ingredients and beat with electric mixer. Once beaten gradually add dry ingredients . Once mixed well these two, add 1/2 cup of instant coffee (reserved). Then you can add pecans or any nuts of your choice. Pour all the mix in a medium greased (with oil) baking pot and take it to the oven.

TIP: The coffee is optional, but you don't want to use coffee, simply add 1/2 cup of hot water to the mixture.

LENTILS BURGERS - VIDEO

Hello friends, how are you today? Here I bring a super-rich of vitamin B recipe, very  easy to make. Today I cooked  Lentils Burgers . Try them, you'll love!


Ingredients (9 servings):
1 cup of lentils - 20 min  cooking 1/2
2 1/2 cups of Water
1/2 Onion, finely chopped
1/2 tsp Garlic, minced or crushed
1 shredded Carrot
1 tbsp Soy Sauce
1 / 2 tz of Bread Crumbs
Salt and Pepper to taste 


Preparation Steps:
Put clean uncooked lentils in 2 1/2 cups of water over medium heat for about 20 minutes or until soft. Once cooked, put them in a bowl and mash slightly. In pan fry onions, garlic and carrots with oil and season with salt and pepper. In bowl of lentils add onion and carrot (fried), soy sauce and salt and pepper to taste and mix well. Form balls, flatten and cover with bread crumbs. Then they are ready to fry or bake 15-20 minutes at 200° C or 400°F. 
I have also used beans instead of lentils. Looks and taste  great!

CLASSIC CHICKEN SOUP - VIDEO

Hello, here I am! Today I'm gonna teach you my way of how to make an awesome  Classic Chicken Soup or Sopa de Pollo Clasica in Spanish, This is super easy to make, works as a great healing for the common cold!



Ingredients (4-5 servings) 
2 1/2 Lt Cold Water 
4 Chicken Pieces (Remove skin is desired) 
1 tsp Garlic, minced or crushed 
2 medium Carrots cut into sticks 
1/2 tz  chopped Celery
1 large Potato cut in dices 
1/2 tz of Green beans cut into pieces 
1/2 large Onion, chopped 
1 bunch of Angel Hair pasta
Salt, Pepper and Oregano to taste 

Preparation Steps: Over medium heat place a pot with cold water, then add chicken along with salt, pepper and oregano and wait water is warm. Then add garlic, carrots, celery, potatoes, green beans, onions and wait for the water to boil. When the potatoes and carrots are cooked, is time to add the angel hair pasta, wait approx. 5 minutes until is totally cooked.
Correct seasoning (salt or pepper) and SERVE! 
TIP:  Before adding angel hair pasta make sure that potatoes and carrots are fully cooked :)

GRITZ WHEAT SOUP - VIDEO

Welcome to Cooking with Wendy, today I bring you another super-rich soup which was asked by my members. This popular dish, great for winter time called Gritz Wheat Soup or Sopa de Semola. Enjoy it!



Ingredients : (4-5 servings) 
2.5 L cold water 
4 Pieces of Chicken  
3 Small Potatoes cut into cubes
3 strips of Celery cut into small cubes 
2 large grated Carrots 
10 tbsp or 140 grm of Gristz Wheat or Peruvian Semola
1 tsp chopped or ground Garlic 
Salt, Pepper and Oregano to taste 

Preparation Steps:
(medium heat) Add in a pot 2.5 liters of cold water and add the chicken, salt, pepper, oregano and garlic. Cover until water is hot, then add the potatoes, celery, carrots. Cover the pot until the water boils, make sure the potato is truly cooked. Add Gristz Wheat slowly to avoid lumps and move constantly avoiding gristz settles at the bottom of the pot. 
Boil for 10 minutes and SERVE!

ROCOTO CHILI CHEESE-SAUCE - VIDEO

Welcome to Cooking with Wendy, today I have a creation of mine Rocoto Chili Cheese-Sauce or Rocoto a la Huancaina. This dish is incredible delicious! This can be served as a dipping sauce or  served with boiled potatoes and eggs as showed in the picture. Hopefully you enjoy this recipe, it is send to you with love :)



For the preparation of this dish you'll need boil some potatoes, eggs 

Ingredients for the sauce: (about 3-4 servings) 
4oz or 100 grm  Fresh Cheese or Queso Fresco
1 1/2 Peruvian Rocoto -unseeded and boiled (watch video)
3 slices of Bread Toast
1 cup of Fresh Milk 
Salt and Pepper to taste 

Preparation Steps:
Blend Rocoto, toast, milk and cheese. Add salt and pepper to taste. Blend and serve with boiled potatoes, eggs, olives and lettuce if desired :)

BREADED CHICKEN - VIDEO

Hello everyone! Welcome to Cooking with Wendy . Today I bring you a great recipe  Breaded Chicken or Milanesas de Pollo in Spanish. Hope you like, it came out delicious... 



Ingredients : 5-6 Servings 
3 filleted Chicken breasts (watch video-tutorial) 
Bread Crumbs  (I used Progresso - Italian Style)

Mixture to marinate: 
1 Egg
1 tsp. of Garlic crushed 
2 tbsp Soy Sauce 
Salt and Pepper to taste 

Preparation Steps: 
Marinate  chicken fillets with the mixture for at least 2 hrs. (Remember that you can also marinate it for 12 hrs.in the refrigerator).
After 2 hrs. or more cover the chicken fillets with the bread crumbs both sides and fry until you get a  golden brown color.
Breaded Chicken or Milanesas de pollo can be accompanied with anything, like potatoes, rice, veggies or a pure.

BEEF EMPANADAS - PICS

Welcome to Cooking with Wendy. 
Today I made Beef  Empanadas  which without doubt were super delicious! You must try this recipe to enjoy an appetizer like this.

Cooking and Improvising with Wendy!
Peruvian style: Empanadas are always accompanied by a lime 



DOUGH:
Ingredients: (approx. 20-22 empanadas)
500 grm or 3 1/4 cups of All Purpose Flour  
125 grm or 4 oz  or 1/2 cup of soft Butter   
170 ml of Water 
1 tsp of Salt 

Preparation Steps: 
Mix flour with salt, baking powder and butter until it forms a "sandblast"


Add little by little the water 


Start kneeing the dough. It has to end looking like this! (Now wrap it with plastic and put it  for half hour minimum) 


FILLING:
Ingredients: 
1 lb. ground Beef or chicken (your choice) 
1 large diced Onion  
1 tsp minced Garlic 
1 Yellow Pepper or Aji Amarillo Peruano (diced)
Salt and Pepper to taste 
3 hard boiled eggs and some olives (optional)

Preparation Steps: 
Ina a medium heat stove fry well in a little oil the ground beef, onion, garlic, yellow pepper, salt and pepper to taste, if desired 1 tbsp oregano add some aroma and flavor to the mix! 









Dough time: Separate dough in balls and 7cm in diameter approx. doesn't matter if they are not perfect! ...








Now start stretching the dough and add put 2 tablespoons of meat, a piece of egg and olive if you want it!. Do not forget to brush the edges of the dough with water to close well!








Close the empanada like the picture!... use a fork to ensure is close correctly.
Put them on a greased and floured tray and to the oven  350 Âº  F for 20 min. or until they are golden.

Do not forget to brush them with egg yolk (to give them color and presentation) and the oven 350 Âº  F for 20 min. or until they are golden. HOMEMADE PASTA ALFREDO W/ CHICKEN - PICS

Holaaaaaa... Today I decided to make my own alfredo sauce, I usually  buy the jar already made, but I wanted to try my own this time. Results: Great! ... 
This sauce has so much flavor, it's easy to prepare. You can do it with shrimp, clams, tofu, or chicken as mine. Here I give you my recipe for this Homemade Pasta Alfredo with Chicken  :)

Linguine with Chicken Alfredo

For this preparation you will need any kind of cooked pasta, I use Linguine, you can use penne pasta, spaghetti or angel hair is up to you.


Ingredients for the sauce: (2-3 servings)
1 Chicken Breast  
2 tbsp Corn Starch 
3 tbsp Cream Cheese (I used Philadelphia)
1 cup of Chicken or Beef Broth
2 cups of Fresh Milk 
2 cloves of Garlic, minced
1 pinch of Nutmeg powder 
Salt and Pepper to taste

Preparation Steps: 
Step 1: Start by cutting the chicken breast into pieces, I cut it in cubes. Remember not to cut them so thick. Then marinated them with salt, pepper and olive oil. Set aside while you do the step 2.

and 2 teaspoons olive oil approx.

Step 2: Now start chopping garlic. Also dissolve the beef or chicken broth in 1 cup hot water if necessary.

Step 3: Now heat a pan over medium temp. and place the chicken pieces. Let them fry until brown color, once ready place them in a separate dish. Watch!

Not necessary to add oil when frying,
remember that is marinate with olive oil

Step 4: Using the same pan add a 2 tablespoons olive oil, chopped garlic, and cornstarch and mix well. (Don't worry if starts forming a dough) then add the beef/chicken broth, let them blend, then add cream cheese, (1 cup) milk. Keep stirring until the mix start boiling then add (1 cup) milk  and cooked chicken. Mix well for a couple of minutes more and serve. Look!

TIP: If lumps formed not worry! ;)
You can use a manual presser. Watch!

After mixing everything,
add only 1 cup milk 


Opt: You can put a sprinkle of nutmeg 


Once you see that the mixture bubbles add
other cup of milk... mix well


Now add the fried chicken and mix them
well. Now you can turn off the heat and serve!
